This delightful Caribbean concoction was created by "Miss Emily" Cooper at the Blue Bee Bar in Green Turtle Cay, Bahamas. Interestingly, Miss Emily never tasted a drop of alcohol in her life, and was allergic to Pineapple! So she never got the pleasure of having one. She created this world-famous cocktail for the Goombay Summer Festival in the Bahamas, and thus the name.

Ingredients
- 1 ounce dark rum
- 1 ounce malibu coconut rum
- 1/2 ounce apricot brandy
- 2 ounces pineapple juice
- 2 ounces orange juice
- 1 teaspoon lime juice, freshly squeezed
- 2 dashes angostura bitters
How To Make goombay smash

Step 1Place all ingredients in a cocktail shaker, add ice and shake until frosty, about 20 seconds.

Step 2Strain into a highball glass filled with ice. Garnish, if you want, with an orange slice and a cherry.
