INGREDIENTS
4 tablespoons (1/2 stick) unsalted butter
8 ounces Canadian bacon
1 medium onion
2 medium celery sticks
1 pound boiling potatoes, such as Yukon gold or Red Bliss
1 tablespoon plus 1 teaspoon fresh thyme leaves or 2/3 teaspoon dried
3 tablespoons all-purpose flour
2 1/2 cups homemade chicken stock or canned broth
3 cups whole milk
12 ounces smoked trout fillets
Smoked paprika, for garnish
Chopped fresh dill leaves or parsley, or chopped chiles, for garnish (optional)
