2 1/2 ounces (5 tablespoons) unsalted butter, softened at room temperature

14 1/2 ounces dark chocolate, chopped (2 1/2 cups)

1 1/2 cups packed light brown sugar
•
4 large eggs, at room temperature
•
2 tablespoons ground espresso powder
•
1 teaspoon pure vanilla extract
•
1/2 teaspoon pure peppermint extract
•
1/2 cup, plus 2 tablespoons unbleached all-purpose flour
•
1 1/2 teaspoons kosher salt
•
1 teaspoon ground cinnamon
•
1/2 teaspoon baking powder
•
1/2 cup mini dark chocolate chips

PEPPERMINT CREAM FILLING:

1 cup heavy cream
•
12 ounces dark chocolate, finely chopped (2 cups)

1 teaspoon pure vanilla extract
•
1/2 teaspoon pure peppermint extract
•
Pinch kosher salt
•
6 tablespoons crushed peppermints (about 18 candies)
