When these boxes are gone, you have to wait another yearâ??unless you make your own. This recipe lets you replicate the peanut butter oatmeal goodness of the Girl Scouts’ Do-Si-Do sandwich cookies, no matter what time of the year it is. Our version is larger than the Girl Scout classics (bigger cookie, bigger peanut butter taste!). 1/2 cup unsalted butter (1 stick), at room temperature
1 cup crunchy peanut butter, at room temperature
1/2 cup powdered sugar, sifted
