1 potato, fresh, medium , peeled

1medium zucchini
•
1Squash, summer, fresh, medium, FDA (yellow )
•
1yellow onion , peeled (Spanish )
•
1/2 tsp salt
•
1/2 tsp black pepper

1medium garlic cloves , finely minced
•
1/4 cup fresh chives , chopped

2 tbsp olive oil , divided in half
