My grandmother and mother used to make this one when I was young. They made it when squash was abundant and people were trying to think of ways to use them up! Yummy and sweet! You'll never know it has squash in it!

Ingredients

  • 2 cups cooked squash, puree in food processor
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 large eggs, beaten
  • 1 cup self risng flour
  • 3/4 stick margarine
  • 2 1/2 cups evaporated milk
  • 2 teaspoons vanilla flavoring

How To Make squash pudding

  • Step 1
    Blend squash. Add sugar and flour. Blend until smooth.
  • Step 2
    Add beaten eggs to mixture. Blend in milk, margarine and flavoring.
  • Step 3
    Pour into 9x13 pan. Bake for 20-25 min. at 450. Good hot or cold!
  • Step 4
    You may also want to add raisins or dried cranberries...experiment!
