Ingredients
- 1 can 20-ounce can crushed pineapple in juice, undrained
- 1 can coconut milk (13 1/2 oz.)
- 1 can nonfat evaporated milk (12 oz.)
- 3/4 cup arborio rice
- 2 - eggs, lightly beaten
- 1/4 cup sugar
- 1/4 cup light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- - toasted coconut for garnish (optional)
How To Make slowcooker pineapple rice pudding

Step 1Place pineapple with juice, coconut milk, evaporated milk, rice, eggs, both sugars, cinnamon, nutmeg and salt into a slow cooker; mix well. Cover; cook on HIGH heat 3 - 4 hours or until thickened and rice is cooked.

Step 2Remove cover and stir to mix thoroughly. Serve warm or chilled with toasted coconut, if desired.
