Ingredients

  • 1 can 20-ounce can crushed pineapple in juice, undrained
  • 1 can coconut milk (13 1/2 oz.)
  • 1 can nonfat evaporated milk (12 oz.)
  • 3/4 cup arborio rice
  • 2 - eggs, lightly beaten
  • 1/4 cup sugar
  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • - toasted coconut for garnish (optional)

How To Make slowcooker pineapple rice pudding

  • Step 1
    Place pineapple with juice, coconut milk, evaporated milk, rice, eggs, both sugars, cinnamon, nutmeg and salt into a slow cooker; mix well. Cover; cook on HIGH heat 3 - 4 hours or until thickened and rice is cooked.
  • Step 2
    Remove cover and stir to mix thoroughly. Serve warm or chilled with toasted coconut, if desired.
