Ingredients
- 3/4 cup granulated sugar
- 1/2 cup arborio rice
- 1/4 cup dried cherries
- 2 tablespoons ground almonds
- 1 teaspoon lemon zest, grated
- - pinch of salt
- 4 cups milk
- 2 - eggs
- 1 teaspoon almond extract
- - toasted sliced almonds, optional
- - heavy cream, optional
How To Make slow cooker rice pudding w/ cherries & almonds

Step 1In a lightly greased slow cooker insert, mix together sugar, rice, cherries, almonds, lemon zest and salt.

Step 2Whisk together milk, eggs and almond extract. Stir into rice mixture.

Step 3Cover and cook on HIGH for 4 hours, until rice is tender and pudding is set.

Step 4Serve warm, garnished with toasted almonds and heavy cream, if desired.
