Ingredients
- 1/3 cup parkay margarine
- 1 cup sugar
- 2 - eggs, separated
- 2 tablespoons lemon juice
- 1 tablespoon grated lemon rind
- 1/3 cup flour
- 1 cup milk
How To Make sassy lemon pudding

Step 1Cream margarine and 3/4 cup sugar until light and fluffy.

Step 2Blend in egg yolks, lemon juice and rind.

Step 3Add flour. Mix well

Step 4Beat egg whites until soft peaks form.

Step 5Gradually add remaining sugar, beating until stiff peaks form.

Step 6Fold into batter;

Step 7Pour into 8 6oz custard cups.

Step 8Set custard ups in baking pan; Pour in boiling water to 1/4 depth (of pan).

Step 9Bake at 350* for 35-40 minutes.

Step 10Remove from water Cool 10 minutes.

Step 11Turn up side down onto dessert dishes
