Instead of custard cups, you can use a 1-quart casserole dish. Baking at 40-45 minutes. Cooling at 20 minutes inverting on a serving plate

    parkay margarine
  • 1 c
  • 2
    eggs, separated
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    grated lemon rind
  • 1/3 c
  • 1 c

How to Make Sassy Lemon Pudding


  1. Cream margarine and 3/4 cup sugar until light and fluffy.
  2. Blend in egg yolks, lemon juice and rind.
  3. Add flour.
    Mix well
  4. Beat egg whites until soft peaks form.
  5. Gradually add remaining sugar,
    beating until stiff peaks form.
  6. Fold into batter;
  7. Pour into 8 6oz custard cups.
  8. Set custard ups in baking pan;
    Pour in boiling water to 1/4 depth (of pan).
  9. Bake at 350* for 35-40 minutes.
  10. Remove from water
    Cool 10 minutes.
  11. Turn up side down onto dessert dishes
