Ingredients

  • 1/3 cup parkay margarine
  • 1 cup sugar
  • 2 - eggs, separated
  • 2 tablespoons lemon juice
  • 1 tablespoon grated lemon rind
  • 1/3 cup flour
  • 1 cup milk

How To Make sassy lemon pudding

  • Step 1
    Cream margarine and 3/4 cup sugar until light and fluffy.
  • Step 2
    Blend in egg yolks, lemon juice and rind.
  • Step 3
    Add flour. Mix well
  • Step 4
    Beat egg whites until soft peaks form.
  • Step 5
    Gradually add remaining sugar, beating until stiff peaks form.
  • Step 6
    Fold into batter;
  • Step 7
    Pour into 8 6oz custard cups.
  • Step 8
    Set custard ups in baking pan; Pour in boiling water to 1/4 depth (of pan).
  • Step 9
    Bake at 350* for 35-40 minutes.
  • Step 10
    Remove from water Cool 10 minutes.
  • Step 11
    Turn up side down onto dessert dishes
