This rice is great as a warm or cold dessert or as a warm side dish with spicy and savory dishes. I am experimenting with this recipe using chia, coconut milk, and stevia, for a healthier version. However, the taste can't be beaten!

Ingredients
- 3/4 cup rice, short grain (sticky)
- 2 cups water
- 3 cups milk
- 4 tablespoons butter
- 1 teaspoon salt
- 2 - eggs
- 1/2 cup sugar
- 1 tablespoon vanilla
- 1/2 cup raisins
- 1 teaspoon cinnamon
How To Make rice pudding

Step 1Mix rice, water, milk, butter, and salt in medium size pan.

Step 2Cook with lid. Boil, stirring constantly to keep the bottom from sticking. Turn down heat to simmer, continue to stir the bottom until the temp lowers to a simmer. Simmer for 45 minutes. Stir occasionally to ensure the bottom doesn't burn. The mixture will thicken and become creamy.

Step 3Beat eggs and sugar (hand or mixer) till smooth.

Step 4Stir into rice slowly. Add vanilla and stir slowly. The mixture should be very creamy.

Step 5OPTIONS: You can add raisins, craisins, different flavored extracts, flavored vinegar, nuts, Be creative.
