Very few people know I like rice or tapioca pudding. This recipe is easy, and well worth the time to make.

Ingredients
- 1 cup rice, cooked
- 2 - eggs, beaten
- 2 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
How To Make rice pudding

Step 1Combine all but cinnamon in buttered 1 1/2 qt casserole. mix well. Put casserole in pan filled with hot water and bake at 350 degrees 55-65 min. When knife inserted in center comes out clean it is done. Sprinkle with cinnamon and serve hot or cold. You can add raisins before baking if desired. DO NOT let water run out or pudding will burn.
