This is a creamy rice pudding I have always liked. I like it warm with a little whip cream.

Ingredients

4 c
scalded milk
2 c
quick cooking long grain rice
dash of salt
1/2 c
raisins (optional)
1 c
evaporated milk
2
slightly beaten eggs
1/2 c
sugar
1 tsp
vanilla extract
dash of cinnamon & nutmeg
whip cream

How to Make Rice Pudding

Step-by-Step

  • 1In the top of a double boiler mix together milk, rice, salt, cinnamon, nutmeg and raisins (optional). Simmer over medium-high heat about 20 minutes.
  • 2In a medium bowl use a wire whisk to beat together evaporated milk, eggs, sugar and vanilla. Stir in rice mixture. Cook stirring constantly until thickened about another 10 minutes or so.
  • 3Pour into serving dishes or a large serving bowl. Spoon into individual dishes and garnish with whip cream.
