This is a creamy rice pudding I have always liked. I like it warm with a little whip cream.

Ingredients
- 4 cups scalded milk
- 2 cups quick cooking long grain rice
- - dash of salt
- 1/2 cup raisins (optional)
- 1 cup evaporated milk
- 2 - slightly beaten eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- - dash of cinnamon & nutmeg
- - whip cream
How To Make rice pudding

Step 1In the top of a double boiler mix together milk, rice, salt, cinnamon, nutmeg and raisins (optional). Simmer over medium-high heat about 20 minutes.

Step 2In a medium bowl use a wire whisk to beat together evaporated milk, eggs, sugar and vanilla. Stir in rice mixture. Cook stirring constantly until thickened about another 10 minutes or so.

Step 3Pour into serving dishes or a large serving bowl. Spoon into individual dishes and garnish with whip cream.
