4 cscalded milk
2 cquick cooking long grain rice
·dash of salt
1/2 craisins (optional)
1 cevaporated milk
2slightly beaten eggs
1 tspvanilla extract
·dash of cinnamon & nutmeg
How to Make Rice Pudding
- In the top of a double boiler mix together milk, rice, salt, cinnamon, nutmeg and raisins (optional). Simmer over medium-high heat about 20 minutes.
- In a medium bowl use a wire whisk to beat together evaporated milk, eggs, sugar and vanilla. Stir in rice mixture. Cook stirring constantly until thickened about another 10 minutes or so.
- Pour into serving dishes or a large serving bowl. Spoon into individual dishes and garnish with whip cream.
