rice pudding

This is a creamy rice pudding I have always liked. I like it warm with a little whip cream.

Ingredients

  • 4 cups scalded milk
  • 2 cups quick cooking long grain rice
  • - dash of salt
  • 1/2 cup raisins (optional)
  • 1 cup evaporated milk
  • 2 - slightly beaten eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • - dash of cinnamon & nutmeg
  • - whip cream

How To Make rice pudding

  • Step 1
    In the top of a double boiler mix together milk, rice, salt, cinnamon, nutmeg and raisins (optional). Simmer over medium-high heat about 20 minutes.
  • Step 2
    In a medium bowl use a wire whisk to beat together evaporated milk, eggs, sugar and vanilla. Stir in rice mixture. Cook stirring constantly until thickened about another 10 minutes or so.
  • Step 3
    Pour into serving dishes or a large serving bowl. Spoon into individual dishes and garnish with whip cream.
