Ingredients

  • 4 slices bread
  • 3 tablespoons butter
  • 1/2 cup granulated sugar
  • 3/4 teaspoon cinnamon
  • 3 cups rhubarb, cut into 1 inch pieces

How To Make rhubarb bread pudding

  • Step 1
    Spread each slice of bread with 1 teaspoon of butter.
  • Step 2
    Cut buttered bread into 1/2\" cubes.
  • Step 3
    Combine sugar and cinnamon.
  • Step 4
    Arrange half of rhubarb in bottom of greased 8\" baking dish.
  • Step 5
    Top with half of bread cubes and half of sugar mixture.
  • Step 6
    Repeat.
  • Step 7
    Dot with remaining butter.
  • Step 8
    Cover and bake in 375 oven for 20 minutes, uncover and bake 20 to 25 minutes more or until lightly browned.
