I make the superfine sugar by just taking regular sugar and blending it for about three minutes

Ingredients

  • 1 can 15 oz pumpkin
  • 1 cup heavy cream
  • 3/4 cup superfine sugar
  • 1/2 teaspoon pumpkin pie spices
  • 1 tablespoon vanilla extract
  • 2 cups heavy cream
  • 1/4 cup superfine sugar
  • gingersnaps (crumbled)

How To Make pumpkin mousse

  • Step 1
    Combine pumpkin, one cup cream, sugar and spice in a medium sauce pan. Simmer over medium heat for five minutes. Cool fully.
  • Step 2
    Whip remaining heavy cream, sugar, and vanilla to soft peaks and fold into cool pumpkin mixture.
  • Step 3
    Pour into serving dishes and crumble ginger snaps over top.
