12 slicecracked, or whole wheat bread, cut into cubes, - 12 cups

1 csweetened, dried cranberries, chopped

2 can(s)evaporated milk

1 can(s)15 oz - pure pumpkin

4 largeeggs, slightly beaten

1 cbrown sugar, firmly packed

1 tspvanilla extract
-
2 tsppumpkin pie spices
-
1/4 tspsalt

BROWN SUGAR YOGURT SAUCE
-
26 oz. containers of non fat plain yogurt
-
3 Tbspbrown sugar, firmly packed
-
·splash of rum
How to Make PUMPKIN BREAD PUDDING W/ BROWN SUGAR YOGURT SAUCE
- PUDDING: Preheat oven to 350 degrees F. Grease and Flour a 13x9x2 baking dish.
- Combine cranberries and bread that has been cut into cubes, in a large bowl.
- Combine evaporated milk, pumpkin, eggs, vanilla, pumpkin spices,and salt in medium bowl.
- Pour egg mixture over bread mixture, stir. Let stand 10 minutes.
- Bake 45-55 minutes or until knife inserted comes out clean.
Serve warm with brown sugar yogurt sauce. - BROWN SUGAR YOGURT SAUCE: Combine yogurt, brown sugar, and rum in small bowl. Pour over pudding while it's hot.
May serve with whipped cream
