This is an old recipe saved from Libby's Pumpkin. It is very delicious. It's Pumpkin Time so ENJOY !!

Ingredients

  • 12 slices cracked, or whole wheat bread, cut into cubes, - 12 cups
  • 1 cup sweetened, dried cranberries, chopped
  • 2 cans evaporated milk
  • 1 can 15 oz - pure pumpkin
  • 4 large eggs, slightly beaten
  • 1 cup brown sugar, firmly packed
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spices
  • 1/4 teaspoon salt
  • BROWN SUGAR YOGURT SAUCE
  • 2 - 6 oz. containers of non fat plain yogurt
  • 3 tablespoons brown sugar, firmly packed
  • - splash of rum

How To Make pumpkin bread pudding w/ brown sugar yogurt sauce

  • Step 1
    PUDDING: Preheat oven to 350 degrees F. Grease and Flour a 13x9x2 baking dish.
  • Step 2
    Combine cranberries and bread that has been cut into cubes, in a large bowl.
  • Step 3
    Combine evaporated milk, pumpkin, eggs, vanilla, pumpkin spices,and salt in medium bowl.
  • Step 4
    Pour egg mixture over bread mixture, stir. Let stand 10 minutes.
  • Step 5
    Bake 45-55 minutes or until knife inserted comes out clean. Serve warm with brown sugar yogurt sauce.
  • Step 6
    BROWN SUGAR YOGURT SAUCE: Combine yogurt, brown sugar, and rum in small bowl. Pour over pudding while it's hot. May serve with whipped cream
