I got this from Southern Living and threw it together for a potluck. HUGE success and not to sweet

Ingredients

  • 15 ounces pureed pumpkin
  • 1 cup dried cranberries
  • 3 tablespoons melted butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 8 ounces french bread torn into chunks
  • 2 cups half and half
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • - sugar cinnamon mixture: optional

How To Make pumpkin bread pudding

  • Step 1
    butter a 11x7 baking dish. Heat oven to 350
  • Step 2
    pour half and half over bread chunks in a bowl
  • Step 3
    in another bowl, combine eggs, sugars, pumpkin, cranberries, melted butter, spices, and vanilla; blend well. pour pumpkin mixture over bread and mix well.
  • Step 4
    pour into prepared pan, sprinkle with cinnamon and sugar. Bake 45-60 mins
