Ingredients

whole milk
1/4 c
half and half or heavy cream
3/4 c
maple syrup
1/2 c
arborio rice
1/2
vanilla bean, split and scraped or 1 teaspoon vanilla paste
orange zest, for garnish

How to Make "Pouding" au Riz

Step-by-Step

  • 1Pour the milk, half and half (or heavy cream) and maple syrup into a saucepan. Heat mixture over medium heat until very hot but not boiling.
  • 2When the milk is hot, stir in the arborio rice. Reduce heat and simmer about 40 minutes, stirring often. Cook until the milk is creamy and the rice is cooked. I covered the pan while it simmered.
  • 3Stir in the vanilla bean (extract). Transfer pudding to either a serving bowl or individual dessert bowls.
  • 4Garnish with orange zest. Delicious warm or cold.
