Ingredients
- 3 cups whole milk
- 1/4 cup half and half or heavy cream
- 3/4 cup maple syrup
- 1/2 cup arborio rice
- 1/2 - vanilla bean, split and scraped or 1 teaspoon vanilla paste
- - orange zest, for garnish
How To Make "pouding" au riz

Step 1Pour the milk, half and half (or heavy cream) and maple syrup into a saucepan. Heat mixture over medium heat until very hot but not boiling.

Step 2When the milk is hot, stir in the arborio rice. Reduce heat and simmer about 40 minutes, stirring often. Cook until the milk is creamy and the rice is cooked. I covered the pan while it simmered.

Step 3Stir in the vanilla bean (extract). Transfer pudding to either a serving bowl or individual dessert bowls.

Step 4Garnish with orange zest. Delicious warm or cold.
