Ingredients

  • 3 cups whole milk
  • 1/4 cup half and half or heavy cream
  • 3/4 cup maple syrup
  • 1/2 cup arborio rice
  • 1/2 - vanilla bean, split and scraped or 1 teaspoon vanilla paste
  • - orange zest, for garnish

How To Make "pouding" au riz

  • Step 1
    Pour the milk, half and half (or heavy cream) and maple syrup into a saucepan. Heat mixture over medium heat until very hot but not boiling.
  • Step 2
    When the milk is hot, stir in the arborio rice. Reduce heat and simmer about 40 minutes, stirring often. Cook until the milk is creamy and the rice is cooked. I covered the pan while it simmered.
  • Step 3
    Stir in the vanilla bean (extract). Transfer pudding to either a serving bowl or individual dessert bowls.
  • Step 4
    Garnish with orange zest. Delicious warm or cold.
