"Pouding" au Riz
3 cwhole milk
1/4 chalf and half or heavy cream
3/4 cmaple syrup
1/2 carborio rice
1/2vanilla bean, split and scraped or 1 teaspoon vanilla paste
·orange zest, for garnish
How to Make "Pouding" au Riz
- Pour the milk, half and half (or heavy cream) and maple syrup into a saucepan. Heat mixture over medium heat until very hot but not boiling.
- When the milk is hot, stir in the arborio rice. Reduce heat and simmer about 40 minutes, stirring often. Cook until the milk is creamy and the rice is cooked. I covered the pan while it simmered.
- Stir in the vanilla bean (extract). Transfer pudding to either a serving bowl or individual dessert bowls.
- Garnish with orange zest. Delicious warm or cold.
