half and half or heavy cream
  • 3/4 c

  • 1/2 c
    arborio rice
  • 1/2

  • ·
    orange zest, for garnish

How to Make "Pouding" au Riz

  1. Pour the milk, half and half (or heavy cream) and maple syrup into a saucepan. Heat mixture over medium heat until very hot but not boiling.
  2. When the milk is hot, stir in the arborio rice. Reduce heat and simmer about 40 minutes, stirring often. Cook until the milk is creamy and the rice is cooked. I covered the pan while it simmered.
  3. Stir in the vanilla bean (extract). Transfer pudding to either a serving bowl or individual dessert bowls.
  4. Garnish with orange zest. Delicious warm or cold.
