pop's banana pudding

My Daddy passed away Feb. 2010. He was always the cook in the house. A couple months after his passing, I was desperate for a bowl of his wonderful banana pudding. I remembered a couple of the ingredients he had on the counter while cooking, so I started my internet search for a recipe similar to his. To my surprise, it was "pudding" that he made...it was vanilla custard! Hope you enjoy this recipe as much as we do.....eat a bowl for my Daddy!

Ingredients

  • 5 - bananas
  • 2 tablespoons butter, unsalted
  • 3 tablespoons cornstarch
  • 5 - egg yolks
  • 4 cups milk
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 2 teaspoons pure vanilla extract
  • 1 package jackson vanilla wafers

How To Make pop's banana pudding

  • Step 1
    In large glass bowl, make layers of vanilla wafers & bananas. Set aside.
  • Step 2
    Combine cornstarch, sugar, & salt in pan- whisk in the milk. Cook until hot or beginning to bubble.
  • Step 3
    Beat egg yolks, stir in small amount of hot milk mixture. Add yolk mixture back to milk mixture.
  • Step 4
    Cook custard until it thickens, stir constantly. Remove from heat once it coats the back of a spoon.
  • Step 5
    Stir in butter & vanilla. Allow custard to cool about 15 minutes.
  • Step 6
    Pour over cookies & bananas.
  • Step 7
    Allow about an hour for pudding to set. If you prefer cold pudding, allow pudding to set in refrigerator.
