This is an old fashioned recipe. If you use leftover salted popcorn, eliminate salt in the recipe. I love to serve this warm with a drizzle of real maple syrup and a few toasted walnuts.

Ingredients For popcorn pudding

  • 2 c
    popcorn, popped
  • 3 c
    milk
  • 3
    eggs
  • 1/2 c
    light brown sugar
  • 1 Tbsp
    butter, melted
  • 3/4 tsp
    salt**
  • whipped cream, real maple syrup, toasted walnuts optional

How To Make popcorn pudding

    Pound popcorn fine or crush in a blender. Scald the milk and pour over the popcorn. Let stand for one hour

    Beat eggs slightly, and add to popcorn milk mixture along with brown sugar, melted butter and salt** (**if you use leftover salted popcorn, eliminate salt from the recipe)

    Pour into greased 4-6 c casserole dish and bake at 300 degrees for one hour. It is nice served warm with whipped cream. I like it with a drizzle of real maple syrup and a few toasted walnuts.
