This is an old fashioned recipe. If you use leftover salted popcorn, eliminate salt in the recipe. I love to serve this warm with a drizzle of real maple syrup and a few toasted walnuts.

Ingredients
- 2 cups popcorn, popped
- 3 cups milk
- 3 - eggs
- 1/2 cup light brown sugar
- 1 tablespoon butter, melted
- 3/4 teaspoon salt**
- - whipped cream, real maple syrup, toasted walnuts optional
How To Make popcorn pudding

Step 1Pound popcorn fine or crush in a blender. Scald the milk and pour over the popcorn. Let stand for one hour

Step 2Beat eggs slightly, and add to popcorn milk mixture along with brown sugar, melted butter and salt** (**if you use leftover salted popcorn, eliminate salt from the recipe)

Step 3Pour into greased 4-6 c casserole dish and bake at 300 degrees for one hour. It is nice served warm with whipped cream. I like it with a drizzle of real maple syrup and a few toasted walnuts.
