pistachio parfaits
My daughter made these for me for my birthday. They were great. Since I am diabetic, she used sugar free pudding and cookies.

Ingredients
- 1 (4 oz.) package pistachio instant pudding
- 6 - chocolate chip cookies (optional)
- 8 ounces cool whip, thawed
- 1 cup shelled pistachios
- 2 cups milk (for the pudding)
How To Make pistachio parfaits

Step 1Preheat oven to 350 degrees.

Step 2Evenly spread the pistachios on a baking sheet.

Step 3Bake for 5 to 10 minutes or until lightly golden brown. Stirring occasionally.

Step 4Prepare the pudding as directed on the package.

Step 5When pistachios have cooled chop them roughly.

Step 6Divide the pudding, shipped topping and pistachios in half.

Step 7Spoon the first half of the pudding into 6 parfait glasses (even;y divided between the glasses)

Step 8Next eveny divide the first half of the whipped topping between the glasses and spoon on top of the pudding.

Step 9Take the first half of the pistachios and evenlt sprinkle them on the whipped topping.

Step 10Repeat the layers.

Step 11Garnish each parfait with a coolie.

Step 12Chill until ready to serve.
