This dish will kick your dinner up a notch! Serve with Chicken or Ham as a hot side dish, or chill it and serve as a dessert with whipped cream. It is good either way. It is made from most items you have in your pantry, and definitely company worthy. Enjoy!

Ingredients

  • 2 cans crushed pineapple (20 ounces each)
  • 3 - eggs lightly beaten
  • 4 - slices french bread, buttered, crusts removed
  • 1/2 - cup sugar
  • 2 tablespoons flour

How To Make bonnie's pineapple side dish or dessert

  • Step 1
    Pre-heat oven to 350 degrees.
  • Step 2
    Drain the pineapple. Reserve 1 cup of pineapple juice. Mix the pineapple juice with the sugar, flour and the eggs until smooth.
  • Step 3
    Spray a round 2 quart pyrex baking dish with Pam kitchen spray. Spoon the mixture into the pyrex dish. Cut the buttered bread into croutons (remove the crusts). Spread them evenly on top of the mixture.
  • Step 4
    Bake uncovered for 50 to 60 minutes until set and browned. If not brown enough, use the broiler for a few minutes.
  • Step 5
    This is an excellent hot side dish for pork or poultry or serve cold as a dessert with a dollop of whipped cream.
