My husband is algertic to bananas so I came up with this instead. it has become a friend and family favorite

vanilla wafers
4 large
2large box
jello &serve french vanilla pudding
2 c
1 large
milk as called for on pudding mix
1/4 tsp
almond extract
2 Tbsp

How to Make pina colta pudding


  • 1chop off top, peel, and core
    chop pineapple into small pieces . I use my food processor for this..
    strain pineapple saving juice..... soak the coconut in the juice for about 5 minutes..
  • 2cover a 9x13 with non stick spray.layer with waffers then pineapple and coconut ending with top layer being waffers .
  • 3separate the 4 eggs saving the a pot put the egg yolks ,milk,and pudding mix and cook according to package pour over the cookies and fruit.set aside while you make a magurine by whipping the egg whites and almond extract and 2 TBS sugar place on top of pudding and place under broiler and cook until golden brown
