Ingredients
- 1 1/2 boxes vanilla wafers
- 4 large eggs
- 2large boxes jello &serve french vanilla pudding
- 2 cups coconut
- 1 large pinapple
- cup milk as called for on pudding mix
- 1/4 teaspoon almond extract
- 2 tablespoons sugar
How To Make pina colta pudding

Step 1chop off top, peel, and core chop pineapple into small pieces . I use my food processor for this.. strain pineapple saving juice..... soak the coconut in the juice for about 5 minutes..

Step 2cover a 9x13 with non stick spray.layer with waffers then pineapple and coconut ending with top layer being waffers .

Step 3separate the 4 eggs saving the whites.in a pot put the egg yolks ,milk,and pudding mix and cook according to package pour over the cookies and fruit.set aside while you make a magurine by whipping the egg whites and almond extract and 2 TBS sugar place on top of pudding and place under broiler and cook until golden brown
