My husband is algertic to bananas so I came up with this instead. it has become a friend and family favorite

Ingredients

  • 1 1/2 boxes vanilla wafers
  • 4 large eggs
  • 2large boxes jello &serve french vanilla pudding
  • 2 cups coconut
  • 1 large pinapple
  • cup milk as called for on pudding mix
  • 1/4 teaspoon almond extract
  • 2 tablespoons sugar

How To Make pina colta pudding

  • Step 1
    chop off top, peel, and core chop pineapple into small pieces . I use my food processor for this.. strain pineapple saving juice..... soak the coconut in the juice for about 5 minutes..
  • Step 2
    cover a 9x13 with non stick spray.layer with waffers then pineapple and coconut ending with top layer being waffers .
  • Step 3
    separate the 4 eggs saving the whites.in a pot put the egg yolks ,milk,and pudding mix and cook according to package pour over the cookies and fruit.set aside while you make a magurine by whipping the egg whites and almond extract and 2 TBS sugar place on top of pudding and place under broiler and cook until golden brown
