persimmon pudding

This recipe is from one of the lovely ladies at church Nita Sappington. I've never tried a recipe with persimmons but I'm determined to try it this fall when they become ripe. Encase you don't know about them they grow wild here in Nortwest Arkansas. But you need to wait till a frost has happened to help them to ripen or they're very bitter.

Ingredients

  • 1 quart persimmons
  • 1 teaspoon salt
  • 2/3 cup sugar
  • 1/2 cup crisco, melted
  • 2 1/2 cups bread crumbs, toasted
  • 1/2 teaspoon soda, dissolved in 1/4 cup water
  • 1 pint buttermilk
  • 3 - eggs, beaten

How To Make persimmon pudding

  • Step 1
    Mix persimmons and milk together and put through a colander, this will make about 1 quart of liquid. Add salt, sugar, soda water, bread crumbs, eggs and Crisco. Stir well, place in 12"x7" well-greased pan.
  • Step 2
    Bake at 350 till done. About 40 minutes.
