perfect christmas pudding
I've been looking for a traditional "English" or "Plum" pudding for Christmas. I will work on this and get it fixed by the next holiday season. I have not tried this recipe yet, as I "adopted" it from the JAP site. I plan to try it closer to the holidays. Anyone that wants to can try it, if they like. Let me know your results.

Ingredients
- 24 - dried figs
- 1.5 cups milk
- 1 cup shortening
- 2 cups soft bread crumbs, lightly packed
- 3/4 cup sugar
- 3 tablespoons quick cooking tapioca
- 1.5 cups all purpose flour
- 2.5 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1/2 teaspoon salt
- 1/3 cup light molasses
- 1 cup walnuts, toasted, chopped
- 3 - egg whites
How To Make perfect christmas pudding

Step 1With scissors, snip stems from figs.

Step 2Then snip figs into small pieces.

Step 3Heat them in milk in top of double boiler until figs are soft (about 20 minutes).

Step 4Remove from heat, stir figs thoroughly until mashed.

Step 5Add shortening, bread crumbs, sugar and tapioca.

Step 6Sift and measure flour, and sift again with other dry ingredients.

Step 7Add with molasses and chopped walnuts.

Step 8Fold in stiffly whipped egg whites.

Step 9Turn into generously buttered 2-quart mold, cover tightly and steam, covered, for 3 hours on a rack in hot water that must come half-way up side of mold.

Step 10Or steam in individual molds.
