Perfect Christmas Pudding

I've been looking for a traditional "English" or "Plum" pudding for Christmas. I will work on this and get it fixed by the next holiday season.

I have not tried this recipe yet, as I "adopted" it from the JAP site. I plan to try it closer to the holidays. Anyone that wants to can try it, if they like. Let me know your results.

  • 24
    dried figs
  • 1.5 c
  • 1 c
  • 2 c
    soft bread crumbs, lightly packed
  • 3/4 c
  • 3 Tbsp
    quick cooking tapioca
  • 1.5 c
    all purpose flour
  • 2.5 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
  • 1 tsp
  • 1 tsp
  • 1/2 tsp
  • 1/3 c
    light molasses
  • 1 c
    walnuts, toasted, chopped
  • 3
    egg whites

How to Make Perfect Christmas Pudding


  1. With scissors, snip stems from figs.
  2. Then snip figs into small pieces.
  3. Heat them in milk in top of double boiler until figs are soft (about 20 minutes).
  4. Remove from heat, stir figs thoroughly until mashed.
  5. Add shortening, bread crumbs, sugar and tapioca.
  6. Sift and measure flour, and sift again with other dry ingredients.
  7. Add with molasses and chopped walnuts.
  8. Fold in stiffly whipped egg whites.
  9. Turn into generously buttered 2-quart mold, cover tightly and steam, covered, for 3 hours on a rack in hot water that must come half-way up side of mold.
  10. Or steam in individual molds.
