perfect christmas pudding

I've been looking for a traditional "English" or "Plum" pudding for Christmas. I will work on this and get it fixed by the next holiday season. I have not tried this recipe yet, as I "adopted" it from the JAP site. I plan to try it closer to the holidays. Anyone that wants to can try it, if they like. Let me know your results.

Ingredients

  • 24 - dried figs
  • 1.5 cups milk
  • 1 cup shortening
  • 2 cups soft bread crumbs, lightly packed
  • 3/4 cup sugar
  • 3 tablespoons quick cooking tapioca
  • 1.5 cups all purpose flour
  • 2.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/3 cup light molasses
  • 1 cup walnuts, toasted, chopped
  • 3 - egg whites

How To Make perfect christmas pudding

  • Step 1
    With scissors, snip stems from figs.
  • Step 2
    Then snip figs into small pieces.
  • Step 3
    Heat them in milk in top of double boiler until figs are soft (about 20 minutes).
  • Step 4
    Remove from heat, stir figs thoroughly until mashed.
  • Step 5
    Add shortening, bread crumbs, sugar and tapioca.
  • Step 6
    Sift and measure flour, and sift again with other dry ingredients.
  • Step 7
    Add with molasses and chopped walnuts.
  • Step 8
    Fold in stiffly whipped egg whites.
  • Step 9
    Turn into generously buttered 2-quart mold, cover tightly and steam, covered, for 3 hours on a rack in hot water that must come half-way up side of mold.
  • Step 10
    Or steam in individual molds.
