peach bread pudding with southern comfort sauce
I was looking to make a twist on a traditional bread pudding and I came up with this. Made it for my husband and he almost ate the whole thing!! I'm sure his cardiologist wouldn't appreciate it, but it sure tastes good:)

Ingredients
- 2 packages 12 oz each, hawaiian king rolls, cubed
- 2 cups heavy cream
- 1 cup sugar
- 2 tablespoons sugar
- 4 tablespoons butter, melted
- 4 large eggs
- 1 teaspoon vanilla
- 2 cans 15 oz each, sliced peaches, cubed
- 1 cup pecans, chopped
- SOUTHERN COMFORT SAUCE
- 1 stick butter
- 1 cup heavy cream
- 1 cup sugar
- 2 large egg yolks
- 1/3 cup southern comfort
How To Make peach bread pudding with southern comfort sauce

Step 1Preheat oven to 350 degrees and lightly butter a 9x13" baking dish.

Step 2Add bread cubes to a large bowl.

Step 3In a medium bowl, whisk 1.5 cups cream, 2 cups milk, 1 cup sugar 4 tbsp melted butter, 4 eggs and vanilla.

Step 4Add cream mixture and diced peaches to bread cubes and toss to combine.

Step 5Pour mixture into the greased dish. Let sit for 15 minutes.

Step 6Drizzle the bread mixture with the remaining 1/2 cup cream.

Step 7Sprinkle pecans on top then the remaining 2 Tbsp of sugar.

Step 8Bake until the center is set - about 45 minutes. Serve warm or cold with Southern Comfort Sauce &/0r whipped cream.

Step 9To make the sauce, first melt the butter in a heavy saucepan.

Step 10In a small bowl, mix cream, sugar and yolks - whisk together.

Step 11Add creamed mixture to butter - cook over medium heat until it comes to a boil, stirring constantly -reduce heat and cook for 4 more minutes.

Step 12Remove from heat and add Southern Comfort (it would also be good with Amaretto or Rum) - serve sauce warm or cold over bread pudding, stirring well before serving.
