my hubby's favorite banana pudding

After my family lost the recipe for our banana pudding I was forced to look for a new one to recreate ours. I used the recipe off the Nabisco box for a guide and changed it to suit my family. My husband does not like meringue so we do not use it.I have also posted a seperate recipe for it.

Ingredients

  • 1 1/2 cups sugar
  • 1 cup flour
  • 9 - eggs, separated
  • 6 cups milk
  • 1 1/2 teaspoons vanilla extract
  • 2 boxes vanilla wafers
  • 6 - bananas

How To Make my hubby's favorite banana pudding

  • Step 1
    Sift sugar and flour into a large double boiler. Add milk and wisk until well blended. Add egg yolks and wisk until well blended. Cook uncovered over boiling water stiring constantly with large metal spoon until mixture becomes thick like pudding. Remove from heat and stir in vanilla.
  • Step 2
    Line the bottom of a large baking dish with a layer of wafers. Add a layer of bananas on top of the layer of wafers, then pour a layer of pudding over bananas and wafers until they are covered rather well. Countinue the pattern until dish is full or you have your desired thickness. Pudding should be your top layer or it will not cook right.
  • Step 3
    Bake for approximately 15 minutes in a 325degree oven. Top should be a dark yellow almost mustard color. WARNING do not over cook, bananas will taste like banana chips if over cooked. Refrigerate for a few hours, it tastes best cold.
