Ingredients

  • 3/4 cup minute rice
  • 1/4 cup white sugar
  • 1 pinch nutmeg or cinnamon (optional)
  • 1 1/2 cups milk
  • 3/4 cup sun-maid raisins
  • 1 teaspoon vanilla extract

How To Make mum's stove-top rice pudding

  • Step 1
    In a pot, add and cook all the ingredients (except vanilla) till it comes to a boil, stirring occasionally.
  • Step 2
    Remove pot from heat and stir in vanilla. Cover pot until moisture is absorbed and pudding is creamy (about 5 mins).
  • Step 3
    Serve warm. Sprinkle with a dash of cinnamon or nutmeg. Add a scoop of vanilla ice-cream or by itself.(I like to add a little milk to mine instead of ice-cream) - makes 4 small servings
