Combine sugar, flour, and salt. Add milk and beaten egg yolks to make a custard.
Cook in double boiler until mixture is as thick as custard. Add vanilla.
Layer vanilla wafers and sliced bananas in baking dish. Pour half of mixture over layers. Add another layer of vanilla wafers and bananas and cover with remaining custard.
Whip egg whites and sugar to make stiff peaks. Pile on top of custard making sure it reaches edges. Bake in hot oven until peaks are golden brown and meringue is stiff, glossiness is gone.
