Although it is "mud" there is no chocolate in this recipe. It is a very refreshing summertime dish, although I serve it year round. It takes a little time to put together but it is well worth it.

Ingredients
- 2 cups walnuts, chopped & divided
- 1 cup all purpose flour
- 1 stick butter, melted
- 1 cup confectioners' sugar
- 1-8 oz - cream cheese, room temperature
- 2-3oz packages vanilla pudding, cook kind
- 1-12 oz - cool whip, thawed
- 3 - 4 - bananas, sliced
- - coconut
- - maraschino cherries
How To Make mississippi mud

Step 1Cook the pudding. Let cool.

Step 2Preheat oven to 400. Mix together the flour, 1 cup nuts and the butter. Press into a greased 13 x 9 pan. Bake for 15 minutes. Let cool.

Step 3After the crust and pudding are cool. Mix together the cream cheese and confectioners sugar, then fold in 1/2 of the cool whip. Spread on cooled crust.

Step 4Spread the cooled pudding onto the cream cheese layer. Place the sliced bananas on the pudding, lightly pressing them into it.

Step 5Spread the remaining cool whip over the pudding.

Step 6Put the coconut, remaining nuts & the cherries on top of the cool whip. Let set at least 4 hours or overnight.
