Although it is "mud" there is no chocolate in this recipe. It is a very refreshing summertime dish, although I serve it year round. It takes a little time to put together but it is well worth it.

Ingredients

2 c
walnuts, chopped & divided
1 c
all purpose flour
1 stick
butter, melted
1 c
confectioners' sugar
1-8 oz
cream cheese, room temperature
2-3oz pkg
vanilla pudding, cook kind
1-12 oz
cool whip, thawed
3 - 4
bananas, sliced
coconut
maraschino cherries

How to Make Mississippi Mud

Step-by-Step

  • 1Cook the pudding. Let cool.
  • 2Preheat oven to 400. Mix together the flour, 1 cup nuts and the butter. Press into a greased 13 x 9 pan. Bake for 15 minutes. Let cool.
  • 3After the crust and pudding are cool. Mix together the cream cheese and confectioners sugar, then fold in 1/2 of the cool whip. Spread on cooled crust.
  • 4Spread the cooled pudding onto the cream cheese layer. Place the sliced bananas on the pudding, lightly pressing them into it.
  • 5Spread the remaining cool whip over the pudding.
  • 6Put the coconut, remaining nuts & the cherries on top of the cool whip. Let set at least 4 hours or overnight.
  • 7Enjoy!
