memere's holiday pudding (aka pink pudding)

My Memere (grandmother) made this for every holiday. I don't think she dared show up without it for fear of being attacked by all the grandchildren and great grandchildren. It is super easy, but I don't remember Mom ever making it...she left that honor to Memere! She always doubled the recipe (and still there never seemed to be enough)

Ingredients
- 1 small pkg strawberry gelatin
- 8 ounces can crushed pineapple, drained
- 1/2 pint heavy whipping cream
- 1/2 bag - mini marshmallows
How To Make memere's holiday pudding (aka pink pudding)

Step 1Mix gelatin as directed on the box. Refrigerate until it just begins to set (thick, soupy).

Step 2Whip cream. Whip semi-set gelatin. Combine cream and gelatin

Step 3Mix in drained pineapples and marshmallows and return to refrigerator to fully set.
