Creamiest rice pudding ever. I use short grain rice, but long grain works well, too.

Ingredients

1/2 c
rice
1 c
water
1 pinch
salt
1/2 stick
butter
4 c
whole milk
2
eggs
1/2 c
sugar
1 tsp
vanilla
1/2 c
raisins
cinnamon

How to Make Liz's Rice Pudding

Step-by-Step

  • 1cook rice, water, salt 20 min or until water is absorbed.
  • 2Add butter and stir. Add milk and simmer about 1 hour until creamy.
  • 3Beat eggs, sugar and vanilla. Remove cooked rice/milk mixture from heat and add egg mixture and raisins. Do not cook any further. Pour into 8 x 8 casserole and sprinkle with cinnamon.
  • 4Chill. Serves 6
