I've made this for family, friends and coworkers and it always receives rave reviews. The arborio rice give it a better mouth feel than short grain rice and the lemon undertones really brightens the flavor.

How to Make Lemony Rice Pudding

  1. Bring water to a boil add rice, salt, and butter. Cover, lower heat and simmer for 20 minutes.
  2. Then after the rice is cooked add:add: half & half,
sugar, cinnamon stick, lemon peel.Bring to a boil and then lower to a simmer and cook covered for 45 minutes, stir occasionally. Remove peel and cinnamon stick and transfer to a shallow serving bowl to cool. best served at room temp or slightly warm.
  3. Notes:
    -Use a heavy 2qt saucepan.
-While short grain rice can probably be substituted, the arborio can absorb a lot more liquid without becoming mushy.
-I use a vegetable peeler to peel the lemon. It gives you long strips which are easier to locate and remove at the end and it peels thinly to eliminate the pith.
