lemony rice pudding

I've made this for family, friends and coworkers and it always receives rave reviews. The arborio rice give it a better mouth feel than short grain rice and the lemon undertones really brightens the flavor.

Ingredients
- 2 cups water
- 1 cup arborio rice
- 1/4 teaspoon salt
- 1 tablespoon butter
- 3 cups half & half
- 1 cup sugar
- 1 - cinnamon stick
- - lemon peel from one small lemon
How To Make lemony rice pudding

Step 1Bring water to a boil add rice,salt, and butter. Cover,lower heat and simmer for 20 minutes.

Step 2Then after the rice is cooked add:add: half & half, sugar,cinnamon stick,lemon peel.Bring to a boil and then lower to a simmer and cook covered for 45 minutes, stir occasionally. Remove peel and cinnamon stick and transfer to a shallow serving bowl to cool. best served at room temp or slightly warm.

Step 3Notes: -Use a heavy 2qt saucepan. -While short grain rice can probably be substituted, the arborio can absorb a lot more liquid without becoming mushy. -I use a vegetable peeler to peel the lemon. It gives you long strips which are easier to locate and remove at the end and it peels thinly to eliminate the pith.
