Ingredients
- 3/4 cup granulated sugar
- 3 tablespoons cornstarch
- 2 cups half-and-half
- 3 large free-run egg yolks, lightly beaten
- 1 pinch ground himalayan sea salt
- 3 large lemongrass sticks, finely sliced
- 1 inch-thick fresh ginger, quartered
- 2 tablespoons lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon butter, room temperature
- 1 chocolate honey graham cracker pie crust
How To Make lemongrass pudding tart

Step 1In a small mixing bowl, combine beaten egg yolks with salt; set aside.

Step 2In a medium saucepan, combine sugar and cornstarch. Add half-and-half and whisk until smooth. Turn the heat to medium and add lemongrass with ginger. Slowly pour warm milk mixture over the yolks and temper the eggs by whisking constantly. After a couple ladles, pour yolks into the saucepan. Add lemon zest and lemon juice; whisk frequently until the mixture thickens.

Step 3Remove from the heat and whisk in butter. Pour mixture through a sieve over a measuring cup and then pour into the prepared *Chocolate Honey Graham Cracker Pie crust. Cool to room temperature before decorating it, about 2 hours then chill for 3 hours.
