This belonged to my mother-law. Several years ago my husband often talked about this dessert, so I asked my sister-in-law if she had the recipe. I have been making this ever since.
It is always a big hit. Light and fluffy, Never any left overs.

Ingredients

  • 3 pkg
    ladyfingers
  • 8 large
    eggs, separated
  • 1 1/2 c
    sugar
  • 2 medium
    lemons
  • 1/2 c
    water
  • 1 pkg
    knox gelatin
  • 1/2 c
    boiling water
  • 1/2 pt
    whipped cream, sweetened
  • 1 tsp
    lemon extract

How to Make Lemon Ice Box Dessert

Step-by-Step

  1. Beat egg yokes, add 1/2 sugar,2 tsp lemon zest, and the juice from two lemons. Cook in a double boiler until the custard coats the spoon.
  2. Melt gelatin in 1/2 cold water, and desolve in 1/2 boiled water. Let cool, and then mix with custard.
  3. Beat egg whites with 1 cup sugar until dry. fold into custard with 1/2 tsp lemon extract.
  4. Place ladyfingers in a 10" spring form pan, on bottom and around the sides. Pour in the custard mixture.
  5. Serve with whipping cream with 1/2 tsp extract.
