This belonged to my mother-law. Several years ago my husband often talked about this dessert, so I asked my sister-in-law if she had the recipe. I have been making this ever since. It is always a big hit. Light and fluffy, Never any left overs.

Ingredients

  • 3 packages ladyfingers
  • 8 large eggs, separated
  • 1 1/2 cups sugar
  • 2 medium lemons
  • 1/2 cup water
  • 1 package knox gelatin
  • 1/2 cup boiling water
  • 1/2 pint whipped cream, sweetened
  • 1 teaspoon lemon extract

How To Make lemon ice box dessert

  • Step 1
    Beat egg yokes, add 1/2 sugar,2 tsp lemon zest, and the juice from two lemons. Cook in a double boiler until the custard coats the spoon.
  • Step 2
    Melt gelatin in 1/2 cold water, and desolve in 1/2 boiled water. Let cool, and then mix with custard.
  • Step 3
    Beat egg whites with 1 cup sugar until dry. fold into custard with 1/2 tsp lemon extract.
  • Step 4
    Place ladyfingers in a 10" spring form pan, on bottom and around the sides. Pour in the custard mixture.
  • Step 5
    Serve with whipping cream with 1/2 tsp extract.
