How to Make Lemon Filling
- In the top part of a double boiler ; Blend 1/2 cup of the sugar , cornstarch , salt and the water ; cook over top of boiling water until thick ; Cover and continue to cook 10 minutes longer , stirring occasionally.
- Beat the egg yolks and the other 1/2 cup of the sugar ; Blend into the hot mixture ; Cook for 2 minutes , constantly stirring.
- Remove from the boiling water and add the margarine , lemon juice and grated rind.
