I have not made this, but my husband loves lemon curd and I am looking for lower calorie items. from learning to bake allergen-free y colette martin

Ingredients

  • 2 tablespoons cornstarch mixed w/ 1/4 cup warm water
  • 3 - 3 eggs (or ener-g egg replacer mixed w/ 6 tablespoons warm water)
  • 2/3 cup lemon juice
  • 1/4 cup hemp milk
  • 3/4 cup sugar
  • 1 teaspoon lemon zest, grated

How To Make lemon filling

  • Step 1
    whisk lemon juice, hemp milk, sugar, lemon zest over med heat. bring to boil
  • Step 2
    when reaches rolling boil, remove pan from heat, add eggs (or egg mixture). whisk for 1 minute. mixture will thicken.
  • Step 3
    whisk in cornstarch mixture. return to medium heat, bring to low boil. whisk frequently for 5 min until thickens.
  • Step 4
    remove from heat and allow to cool. will thicken more.
