  • 2 Tbsp
    cornstarch mixed w/ 1/4 cup warm water
  • 3
    3 eggs (or ener-g egg replacer mixed w/ 6 tablespoons warm water)
  • 2/3 c
    lemon juice
  • 1/4 c
    hemp milk
  • 3/4 c
  • 1 tsp
    lemon zest, grated

How to Make Lemon Filling


  1. whisk lemon juice, hemp milk, sugar, lemon zest over med heat. bring to boil
  2. when reaches rolling boil, remove pan from heat, add eggs (or egg mixture). whisk for 1 minute. mixture will thicken.
  3. whisk in cornstarch mixture. return to medium heat, bring to low boil. whisk frequently for 5 min until thickens.
  4. remove from heat and allow to cool. will thicken more.
