Ingredients

cornstarch mixed w/ 1/4 cup warm water

3 eggs (or ener-g egg replacer mixed w/ 6 tablespoons warm water)
2/3 c
lemon juice
1/4 c
hemp milk
3/4 c
sugar
1 tsp
lemon zest, grated

How to Make Lemon Filling

Step-by-Step

  • 1whisk lemon juice, hemp milk, sugar, lemon zest over med heat. bring to boil
  • 2when reaches rolling boil, remove pan from heat, add eggs (or egg mixture). whisk for 1 minute. mixture will thicken.
  • 3whisk in cornstarch mixture. return to medium heat, bring to low boil. whisk frequently for 5 min until thickens.
  • 4remove from heat and allow to cool. will thicken more.
