- cornstarch mixed w/ 1/4 cup warm water
- 3 eggs (or ener-g egg replacer mixed w/ 6 tablespoons warm water)
- 2/3 c
- lemon juice
- 1/4 c
- hemp milk
- 3/4 c
- 1 tsp
- lemon zest, grated
How to Make Lemon Filling
- 1whisk lemon juice, hemp milk, sugar, lemon zest over med heat. bring to boil
- 2when reaches rolling boil, remove pan from heat, add eggs (or egg mixture). whisk for 1 minute. mixture will thicken.
- 3whisk in cornstarch mixture. return to medium heat, bring to low boil. whisk frequently for 5 min until thickens.
- 4remove from heat and allow to cool. will thicken more.
