cornstarch mixed w/ 1/4 cup warm water
3 eggs (or ener-g egg replacer mixed w/ 6 tablespoons warm water)
How to Make Lemon Filling
1whisk lemon juice, hemp milk, sugar, lemon zest over med heat. bring to boil
2when reaches rolling boil, remove pan from heat, add eggs (or egg mixture). whisk for 1 minute. mixture will thicken.
3whisk in cornstarch mixture. return to medium heat, bring to low boil. whisk frequently for 5 min until thickens.
4remove from heat and allow to cool. will thicken more.
