2 Tbspcornstarch mixed w/ 1/4 cup warm water
33 eggs (or ener-g egg replacer mixed w/ 6 tablespoons warm water)
2/3 clemon juice
1/4 chemp milk
1 tsplemon zest, grated
How to Make Lemon Filling
- whisk lemon juice, hemp milk, sugar, lemon zest over med heat. bring to boil
- when reaches rolling boil, remove pan from heat, add eggs (or egg mixture). whisk for 1 minute. mixture will thicken.
- whisk in cornstarch mixture. return to medium heat, bring to low boil. whisk frequently for 5 min until thickens.
- remove from heat and allow to cool. will thicken more.
