Ingredients
- 2 tablespoons cornstarch mixed w/ 1/4 cup warm water
- 3 - 3 eggs (or ener-g egg replacer mixed w/ 6 tablespoons warm water)
- 2/3 cup lemon juice
- 1/4 cup hemp milk
- 3/4 cup sugar
- 1 teaspoon lemon zest, grated
How To Make lemon filling

Step 1whisk lemon juice, hemp milk, sugar, lemon zest over med heat. bring to boil

Step 2when reaches rolling boil, remove pan from heat, add eggs (or egg mixture). whisk for 1 minute. mixture will thicken.

Step 3whisk in cornstarch mixture. return to medium heat, bring to low boil. whisk frequently for 5 min until thickens.

Step 4remove from heat and allow to cool. will thicken more.
