How to Make Lemon Curd


  1. Beat eggs, yolks,and sugar in top of a double boiler with electric mixer until light and fluffy.
    3 to 5 minutes
  2. Beat in rind, juice and butter.
  3. Cook stirring constantly , over hot, not boiling water until mixture thickens, about 15 minutes.
  4. Remove from heat, cool.
  5. Spoon into jars, seal; refrigerate for up to 2 weeks
