Been seeing folks mention lemon curd in comments about recipes and thought since I looked it up, I'd share the recipe I found

Ingredients
- 2 - whole eggs
- 2 - egg yolks
- 1 1/2 cups sugar
- 2 tablespoons grated lemon rind
- 2/3 cup lemon juice
- 2 sticks butter or margarine
How To Make lemon curd

Step 1Beat eggs, yolks,and sugar in top of a double boiler with electric mixer until light and fluffy. 3 to 5 minutes

Step 2Beat in rind, juice and butter.

Step 3Cook stirring constantly , over hot, not boiling water until mixture thickens, about 15 minutes.

Step 4Remove from heat, cool.

Step 5Spoon into jars, seal; refrigerate for up to 2 weeks
