Been seeing folks mention lemon curd in comments about recipes and thought since I looked it up, I'd share the recipe I found

yield 4 1/2 cups

Ingredients

  • 2 - whole eggs
  • 2 - egg yolks
  • 1 1/2 cups sugar
  • 2 tablespoons grated lemon rind
  • 2/3 cup lemon juice
  • 2 sticks butter or margarine

How To Make lemon curd

  • Step 1
    Beat eggs, yolks,and sugar in top of a double boiler with electric mixer until light and fluffy. 3 to 5 minutes
  • Step 2
    Beat in rind, juice and butter.
  • Step 3
    Cook stirring constantly , over hot, not boiling water until mixture thickens, about 15 minutes.
  • Step 4
    Remove from heat, cool.
  • Step 5
    Spoon into jars, seal; refrigerate for up to 2 weeks
