laura's bread pudding with vanilla sauce

I used an old recipe and added a few ingredients, including the vanilla sauce to make this a decadent comfort food dessert.

Ingredients

  • 1 1/2 cups milk
  • 1/4 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 - eggs, beaten
  • 1/2 - loaf of french or italian bread, cut into cubes (about 4 cups)
  • 1/4 cup raisins
  • 1/4 cup shredded coconut
  • 1/4 cup pecans, in pieces
  • 1 tablespoon butter, cut into small peices
  • - cinnamon
  • VANILLA SAUCE
  • 1 cup sugar
  • 1/2 cup butter
  • 1 - egg, well beaten
  • 1 teaspoon pure vanilla extract
  • 4-5 teaspoons water

How To Make laura's bread pudding with vanilla sauce

  • Step 1
    Preheat oven to 350 degrees. Grease a 1 1/2 quart casserole dish and set aside.
  • Step 2
    For pudding: In a medium bowl with wire whisk, beat milk, sugar, vanilla, salt and eggs until well mixed. Add bread, raisins and butter. Toss until bread is well coated. Sprinkle with cinnamon. Bake in preheated oven for 55 to 60 minutes until knife inserted in center of pudding comes out clean.
  • Step 3
    For Vanilla Sauce: In a medium sauce pan melt butter. Add sugar, beaten egg and water. Stir constantly until mixture begins to boil. Be careful not to scorch bottom. Remove from heat and cool. Stir in 1 t. vanilla and pour over baked pudding.
