kentucky bread pudding

once again this is a recipe from my days at the Marriott, it is a kentucky favorite that I added my own touches too, hope you all will enjoy.

Ingredients

  • 2 pounds bread
  • 1/2 teaspoon cinnamon
  • 1/2 tablespoon nutmeg
  • 2 sticks vanilla bean
  • 1/2 cup kentucky bourbon
  • 12 - egg yolks
  • 1 quart heavy cream
  • 1 box raisins
  • 1 cup graulated sugar

How To Make kentucky bread pudding

  • Step 1
    First combined egg yolks and sugar in a large bowl, whip until thick and light. next scald milk and vanilla bean, and bourbon.over direct heat. next very gradually pour scalded cream into egg mixture while stirring constantly with whip.set the bowl aside to cool down.
  • Step 2
    Next cut bread into small pieces place in bowl with cinnamon, nutmeg,raisins, toss together than place into greased ramekins, pour cream' anglaise over the bread. than bake in oven at 345 for 20 to 25 minutes.
  • Step 3
    to make sure they are done place toothpick in middle til it comes out clean, than sit aside until cool. place the ramekin unside down on plate, and garnish the way you like.
