This is a recipe from my mom-in-law, Elaine Conforti's recipe box. I've added it exactly as she had it written.

Ingredients

  • 2/3 cup yellow corn meal
  • 4 1/2 cups milk
  • 1/4 cup butter
  • 1/2 cup molasses
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

How To Make indian pudding

  • Step 1
    Preheat oven to 325
  • Step 2
    Scald 3 1/2 cups milk in top of a double boiler over direct heat.
  • Step 3
    Mix cornmeal with remaining 1 cup cold milk. Add to scalding milk, stirring constantly; place over boiling water to cook for 20 mins, stirring frequently.
  • Step 4
    Add butter, molasses, salt, sugar & cinnamon. Pour into greased 1 1/2 quart baking dish.
  • Step 5
    Bake at 325 to 350 for 1 1/2 hours. May be served with cream or vanilla ice cream.
