I usually make this at Thanksgiving Time; sometimes, at Christmas Time. It is really good with either ice cream, whipped cream or even cool whip for a topping.
How to Make Indian Pudding
- 1Slowly stir cornmeal into hot milk in double boiler top. Cook over boiling water, stirring occasionally, 20 minutes.
Preheat oven to 325F
- 2Grease bottom of 12x8x2 inch baking dish.
- 3To cornmeal, add rest of ingredients, except cold milk; mix well.
Turn into prepared dish; add milk. Bake, uncovered, 50 minutes, or until set.
Serve hot, with ice cream.
Makes 8 servings.
