I have had this recipe for many many years...notice I said many many....I have though! The picture is as old as the recipe, I did not take the picture, however; always love to view it. It reminds me of Thanksgiving each time I look at it! I usually make this at Thanksgiving Time; sometimes, at Christmas Time. It is really good with either ice cream, whipped cream or even cool whip for a topping.

Ingredients

  • 1/2 cup cornmeal
  • 4 cups hot milk
  • 3/4 cup light molasses
  • 2 - eggs
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1 cup cold milk

How To Make indian pudding

  • Step 1
    Slowly stir cornmeal into hot milk in double boiler top. Cook over boiling water, stirring occasionally, 20 minutes. Preheat oven to 325F
  • Step 2
    Grease bottom of 12x8x2 inch baking dish.
  • Step 3
    To cornmeal, add rest of ingredients, except cold milk; mix well. Turn into prepared dish; add milk. Bake, uncovered, 50 minutes, or until set. Serve hot, with ice cream. Makes 8 servings.
