Having Diabetics in the family, I'm always on the hunt for things to lump together to make for the perfect 'sweet' but not too harmful type of desserts/treats. This seems to be it!!

Ingredients

  • 1 box chocolate sugar free instant pudding mix
  • 1 box vanilla sugar free instant pudding mix
  • 1 box butterscotch sugar free instant pudding mix
  • 4 cups skim milk
  • 1/2 cup peanut butter
  • 1 package small package lite or sugar free whipped topping

How To Make i mousse you!

  • Step 1
    Pour milk into large bowl. Add all three packages of pudding mixes. Blend thoroughly, I use a stick blender. Add the peanut butter in little spoonsful...equaling approximately 1/2 cup. Fold in one container of whipped topping of your choice.
  • Step 2
    At this point you can put it into individual cups (covered) in the fridge, or just put it into a covered bowl for chilling. I'd say up to two hours to get nice and cold, but I can't ever wait, so 1/2 hour works!!
  • Step 3
    If you use the sugar free INSTANT pudding, this is a GREAT alternative and super tasting mousse treat for diabetics!!! The butterscotch pudding adds a wonderful hint of that fabulous flavor, while the chocolate and vanilla flavored puddings give it a fudgy punch...the peanut butter, along with the whipped topping, sets it all off with thier ability to give this dessert/treat an actual 'mousse' consistency. I hope you'll give it a try! You certainly can use the regular puddings as well!!
