ena's scottish trifle

My mother, Ena, made this Trifle every holiday. The kids always tried to get the adult version but seldom were successful.

Ingredients For ena's scottish trifle

  • 1 pkg
    jello, red
  • pkg
    jello, green
  • 1 can
    fruit cocktail
  • 1 pt
    custard (not really pint but for 8 servings)
  • 1 sm
    pound cake
  • 1 pkg
    whipping cream or cool whip if you're in a hurry
  • 1 bottle
    sprinkles or other fancy decorations

How To Make ena's scottish trifle

    Make the jello in two separate containers. Set until jiggly stage has been reached.

    Bake pound cake as directed in that recipe and cut into 1" squares. Alternately, you can use a store-bought cake and cut in 1" squares

    Make custard per the directions on the tin - I use Bird's Custard. Alternately, you can use Vanilla Instant Pudding. Make it and let it set for 5 minutes.

    Whip your cream until soft peak stage.

    Starting with the cake squares, layer the trifle in the following order: 1. On the bottom, place cake squares so they cover the bottom of your dish. 2. Pour your fruit cocktail over the cake, along with 1/2 the juice. If the cake looks dry, add more. You can substitute alcohol for the juice if there are no children. 3. Put the red jello in and spread it across the fruit. It will fill in and will set with the fruit. 4. Wait about 10 minutes and add the green jello on top of the red. 5. Give the jello about and hour to set and then add the custard/pudding, spreading it across the green jello. 6. After the custard.pudding has settled, add the whipped cream and top with green and red sprinkles.

    When serving, make sure to dig down deep so each person gets some of the entire dessert. Keeps well refrigerated for a day or two. Can make the day ahead and store in refrigerator.
