Ingredients
- 1/4 cup all purpose flour
- 1 tablespoon cornstarch
- 1 cup sugar
- 2 1/2 cups milk
- 1/2 cup rum or bourbon
- 2 x large eggs, seperated
- 1 tablespoon butter
- 1 tablespoon pure vanilla extract
- 2 x large egg whites, stiffly beaten
- GARNISH:
- - cool whip free
- - nutmeg
How To Make eggnog pudding

Step 1In a medium saucepan, combine flour, cornstarch & sugar; stir well. Add 1/2 C milk & stir until smooth.

Step 2In another saucepan, scald remaining milk (to just below boiling point); add to flour mixture. Cook & stir over medium heat (DO NOT ALLOW TO BOIL).

Step 3In a small bowl, beat yolks. Remove 1/2 C hot mixture & add to the yolks (tempering); mix well & return to the saucepan. Continue to cook over low heat ; 2 - 3 minutes.

Step 4Remove from heat & stir in butter, extract & rum.

Step 5Beat egg whites until stiff but not dry. Fold in egg whites into hot mixture thoroughly.

Step 6Divide amoung desert dishes & chill for at least 4 hours.

Step 7Before serving, place a dollop of cool whip & sprinkling of nutmeg on top.
