eclair pudding

I used to make this for potluck lunches at work. It was always a big hit ... at work and at home...because I always had to make 2! HAHA! It is family favorite and a great dish for potlucks at church and other get-togethers! It is quick and easy to make and delicious to eat! I just happened and to think of it the other day and just had to dig out my old recipe! Try it and I think you will like it too!

Ingredients

  • 1 box graham crackers
  • 2 packages instant vanilla pudding
  • 1 large cool whip
  • TOPPING
  • 1/3 cup cocoa
  • 1/4 cup milk
  • pinch salt
  • 5 tablespoons margarine
  • 1 teaspoon vanilla
  • 1 cup powdered sugar

How To Make eclair pudding

  • Step 1
    Mix pudding according to directions. Fold in cool whip. Line 13x9 pan with graham crackers. Pour layer of pudding. Continue layering ending with graham crackers.
  • Step 2
    Bring to a boil the cocoa, milk and salt for 1 minutes. Remove from heat and stir in powdered sugar, margarine and vanilla until well mixed.
  • Step 3
    Cool slightly and pour on top of graham crackers. Refrigerate at least 4 hours before serving.
