easy rice pudding

While at my brother's house, we were trying to come up with a last-minute dessert that we could make with items we had on hand. I had a recipe for rice pudding that looked very easy and sounded pretty good. As we started putting it together, we found that we had to substitute a couple of items but it really turned out very good. This is what we came up with.

Ingredients

  • 3 cups milk (2% milk works)
  • 1 cup minute white rice, uncooked
  • 1 medium red or green apple, diced
  • 1/3 cup raisins, dark or golden
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter
  • 1/3 cup sugar (splenda works)
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract (optional)
  • 1 package (4 oz serving size) vanilla flavored instant pudding
  • 1/3 cup walnuts or pecans, chopped (optional)

How To Make easy rice pudding

  • Step 1
    In a medium saucepan, on medium-low heat, bring 1 cup of the milk to boil.
  • Step 2
    Stir in rice, apple, raisins, cinnamon, nutmeg, butter, sugar, salt and extract (if using). Cover and reduce heat to low; simmer for 5 to 7 minutes. Remove from heat. Let stand 5 minutes.
  • Step 3
    Meanwhile, in a medium bowl, combine remaining 2 cups milk with the instant pudding mix; whisk until smooth.
  • Step 4
    Add rice mixture to prepared pudding; mix well. Stir in nuts.
  • Step 5
    Cover surface of pudding with plastic wrap or airtight lid; cool 5 minutes.
  • Step 6
    Serve warm or chilled, sprinkled with cinnamon (optional).
