Ingredients
- 1 cup long grain white rice
- 1/2 cup evaporated milk
- 3/4 cup water
- 2 - 4-inch cinnamon sticks
- 1 pinch salt
- 1-3/4 cup milk or almond milk
- 1/4 cup golden raisins
- 1 cup nestle la lechera canned dulce de leche
- 1/2 teaspoon vanilla extract
How To Make dulce de leche rice pudding
-
Step 1Place rice, water, evaporated milk, cinnamon sticks and a pinch of salt in a small/compact rice cooker and cook using the regular setting.
-
Step 2When rice cooker is finished, scoop the rice into a small saucepan, along with the raisins, dulce de leche, and milk or almond milk, stirring to mix.
-
Step 3Bring mixture to a bubble and simmer gently over low heat, stirring frequently, for about 25 minutes or until thickened and rice is tender. You can add a tablespoon or two of water or milk if the heat is too high and it starts getting too thick.
-
Step 4Remove from heat, fish out the cinnamon sticks and stir in the vanilla. Cool to room temperature then refrigerate until serving time. This thickens up even more as it keeps so adjust the thickness with milk or water just before serving- the rice does this.
