diane's pumpkin/walnut pudding

was having leftovers for dinner but wanted to have some fresh and yummy....came up with this.... is alot like pumpkin pie without the crust

Ingredients

  • 2 - 16 oz cans solid pack pumpkin
  • 2/3 cup splenda
  • 1 1/2 teaspoons pumpkin pie spice
  • 6 large eggs,well beaten
  • 1 1/2 cups dry powdred milk
  • 1 cup water
  • 1 teaspoon pure vanilla extract
  • 1 1/2 sticks butter
  • 2/3 pound walnut pieces

How To Make diane's pumpkin/walnut pudding

  • Step 1
    in lg bowl... mix splenda,pie spice and dry milk, add vanilla to water,slowly add to splenda mix add eggs beating after each egg is addedadd pumpkin mix and stir well
  • Step 2
    spray a 9x13 with non stick spray....pour pumpkin mix into pan melt the 1/2 stick of butter in microwave drizzle over top
  • Step 3
    have oven preheated to 425... put pumpkin in oven set timmer for 12 minutes... when timmer goes off reduce heat in oven to 350 ice cream set timmer for 38 min
  • Step 4
    jus before timmer goes off melt other stick of butter in microwave stir walnuts in butter after timmer goes off remove from oven and sprinkle walnuts over pumpkins return to oven bake 15 min more good jus like this out of the oven or let cool some and serve with van
