Ingredients
- 1-1/2 cup water
- 1/2 cup rice
- 1 cup skim milk
- 3 tablespoons splenda
- 2 teaspoons cornstarch or flour
- 1 teaspoon vanilla flavoring
- - nutmeg or cinnamon (optional)
How To Make diabetic rice pudding

Step 1Combine water and rice in saucepan. Bring to a boil. Reduce heat to simmer. Cover and cook until rice is tender, about 25 minutes. Add milk.

Step 2Combine Splenda and cornstarch. Slowly stir in rice mixture. Bring to boil. Boil gently to thicken, about 2 minutes.

Step 3Remove from heat. Add flavoring. Sprinkle with cinnamon or nutmeg, if you'd like. Makes 4 (1/2 cup) servings.
