Ingredients

1-1/2 c
water
1/2 c
rice
1 c
skim milk
3 Tbsp
splenda
2 tsp
cornstarch or flour
1 tsp
vanilla flavoring
nutmeg or cinnamon (optional)

How to Make Diabetic Rice Pudding

Step-by-Step

  • 1Combine water and rice in saucepan. Bring to a boil. Reduce heat to simmer. Cover and cook until rice is tender, about 25 minutes. Add milk.
  • 2Combine Splenda and cornstarch. Slowly stir in rice mixture. Bring to boil. Boil gently to thicken, about 2 minutes.
  • 3Remove from heat. Add flavoring. Sprinkle with cinnamon or nutmeg, if you'd like. Makes 4 (1/2 cup) servings.
