How to Make Diabetic Rice Pudding
- 1Combine water and rice in saucepan. Bring to a boil. Reduce heat to simmer. Cover and cook until rice is tender, about 25 minutes. Add milk.
- 2Combine Splenda and cornstarch. Slowly stir in rice mixture. Bring to boil. Boil gently to thicken, about 2 minutes.
- 3Remove from heat. Add flavoring. Sprinkle with cinnamon or nutmeg, if you'd like. Makes 4 (1/2 cup) servings.
